The tradition of smoking beef, poultry, pork, fish, and cheeses is a time-honored tradition passed down from one generation to the next. As technology advances, so do our smokers. Today, smokers come in three different varieties: traditional wood-fired, pellet, and electric smokers. Electric smokers are perfect for smoking newbies and busy people<\/b> because of their ease of use and relatively low demand for our attention.<\/p>\n

This book is divided into two sections; the first is a quick, down, and dirty guide to using and maintaining your smoker. The second section has some of my absolute favorite recipes for you to try.<\/p>\n

Smoked Prime Rib of Beef <\/h3>\n

Serves: 8-10 <\/p>\n

Preparation Time: 5 minutes <\/p>\n

Cooking Time: 5\u00bd to 6 hours (35 minutes per pound) <\/p>\n

Preferred Wood: Mixture of oak and cherry <\/p>\n

Directions <\/p>\n

1. Preheat your smoker to around 225\u2109 (110\u2103) and add in the mixture of cherry and oak wood chips to the loading tube. <\/p>\n

2. Trim the excess fat from the prime rib, along with any and all sinew. Leave about \u00bc inch of fat on top of the roast. <\/p>\n

3. Blend the mustard, garlic, and horseradish in a small bowl. Completely cover the roast in the mixture, and season it all over with salt and pepper to taste. <\/p>\n

4. Place the prime rib inside the smoker and smoke until the internal temperature of the meat reaches around 120\u2109 (50\u2103) for rare doneness. This will take about 5 hours, depending on the thickness of your cut. <\/p>\n

5. Place the roast on a cutting board and rest it, covered with foil, for 20 minutes. <\/p>\n

\n \u00bd cup (125 g) horseradish mustard
\n 2 Tbsp. horseradish sauce
\n Coarse salt and black pepper <\/p>\n
