Rissotto recipe for your hob!

Add chorizo to the frying pan, then once crispy, remove a quarter of it.

Add rice and stir for a minute then add the vinegar.

After add a ladle of stock and wait until it has been absorbed. Continue to do this until all stock has gone.

Add Parmesan and peas to the rice mixture and give everything a good stir.

Once all the cheese has melted, season with black pepper and serve with remaining chorizo and extra Parmesan.

200g Chorizo

300g Risotto Rice

2 tbsp Vinegar

1.2l Chicken Stock

200g Frozen peas

60g Grated Parmesan
