Blue Smoke! If you don’t see it, or at least a very clear smoke, you’re not getting the right smoke flavour on your food. White smoke is bad, this will give your food a bitter taste, this is often the case in the UK due to high moisture content wood being sold, especially on ceramic cookers where we purposely shut the airflow to the fire down to maintain low and slow temperatures.
We’ve solved this problem with these big chips / mini chunks, they are very dry and small, to suit your small fire, simply distribute 2-3 handfuls throughout your coal bed and watch the blue smoke roll as they fully ignite. These clean burning chips will really take your food to the next level.

They also work great for grilling, throw a few in the coals and close the lid to infuse your food.
You can also run them in smoke tubes, boxes or tin foil packages right on the coals.
All the time we use a few handfuls of these chips in the fuel chamber of the Masterbuilt 1050 and 560 gravity smoker.
