Easy Homemade Bread

No knead bread is a very simple and easy way to make good bread, and it works so well in a wood fired oven, you simply mix the ingredients to make a stiff dough, and then leave overnight, ideally around 14 hours.

400g Strong White bread flour 8g fine sea salt 300g water from tap 1g instant dried yeast Stir to bring together, but no need to knead.

Fire up your wood fired oven so that it has a nice steady stable temperature of 250-300c. Place a cast iron pot or dutch oven in the wood fired oven until it gets hot, at least 15-20 minutes.

Shape after at least 14 hrs at room temperature. Use a little fine semolina on the work surface and bring together as a rounded loaf. Leave covered for a couple of hours on a sheet of baking parchment. Pop into the cast iron pan for 30 minutes with the lid on, and 10 minutes with the lid off, depending how dark you like the crust. I cooked mine in the Bushman Santorini wood fired oven. This can also be cooked in a regular BBQ or indoor oven.
