This was my first Masterbuilt Gravity Smoker brisket, however I have smoked a fair few before. I only have a small piece of brisket that I wanted to do a test cook on, I will be running a full packer brisket on the Masterbuilt 560 grill shortly, but this was good enough to see how well a longer cook would go on the grill.
I also popped on a rack of short ribs to keep the brisket company (wouldn’t want it getting lonely now). I was very impressed with the temperature holding of the grill, I set it to around 140c, and it help temperature steady as you like. I loaded the hopper up with lumpwood charcoal and some cherry wood for smoke, popping a couple of pieces in the hopper and a couple of pieces in the ash pan at the bottom to smoulder.
This worked out well, though I think another chunk or two would still be good, but that’s why I wanted to run this as a test. I used about 3kg of lumpwood for a smoke that was about 7 hours and wrapped with butcher paper when I was happy with the bark. I allowed to rest for a couple of hours.
I was very impressed with the cook as a whole, and am looking forward to a full packer brisket on the Masterbuilt Gravity 560 smoker soon.
